Not only is she a bad ass but she totally nailed this black bean and corn salsa recipe. It’s easy to make and you won’t be able to stop eating it ever. So KRANK UP some Lita Ford and get ready to eat some damn good salsa.
Here’s what you’ll need to make what I call, Lita Corn.
TWO 15-OUNCE CANS OF BLACK BEANS (DRAINED AND RINSED)
1 CAN OF YOUR FAVORITE ROTEL (I PREFER THE HOT KIND)
KERNELS CUT FROM 2 FRESH EARS OF CORN
4 JALAPENOS, SEEDED AND FINELY DICED
1/2 RED ONION, FINELY DICED
1/4 CUP MINCED FRESH CILANTRO OR YOU CAN USE IT FROM THE TUBE
1/4 FRESH LIME JUICE
1 TEASPOON GROUND CUMIN
4 TEASPOONS OLIVE OIL
SALT TO TASTE
HOW TO MAKE IT: MIX ALL INGREDIENTS TOGETHER AND CHILL FOR AN HOUR. (DAMN THAT’S EASY)
NOW EAT UP. I PREFER TO CHOW DOWN ON THIS WITH MY FAVORITE TORTILLA CHIPS ALONG SIDE A HOT NEW MEXICAN DISH.
